We've always been big fans of Amy's and she's got a few new picks worth having on hand. Our favorite is the Mexican Casserole and is one of her Bowls- sort of a one pot meal to go.
This spicy number is made with organic white corn masa, black beans, sweet golden corn, tomatoes, olives and a secret chili spice blend. One serving (the bowl) is 370 calories, 16 g fat, 48 g carbohydrate, 12 g protein and 7 g fiber. 8 POINTS.
One of the best things about this meal is it's lower in sodium than most frozen meals. That's worth a big hooray for those of you who swell up like we do from too much salt. The Mexican Casserole has 390 mg which is still on the high side if you watch salt closely but less than many frozen foods.
If this is too many calories in one meal for you we suggest eating this restaurant style. Leave half of it in the bowl and save it for another meal. Add a crisp green salad and it's perfectly satisfying.
We are lucky enough to find Amy's at our local Raley's, Walmart and Whole Foods. BEWARE though, this one says Light In Sodium on the top of the box. It also has less calories than other Amy's we've seen. Be sure to check the calories and sodium before you bring it home. ENJOY
