Pasta Salad with an Italian Twist Print


Pasta salad is one of those things that can be deadly to your diet. Here's a spin on this popular summer side dish that's light and easy.

5 cups cooked whole wheat pasta
1 1/2 cups artichoke hearts in water
1/2 small red onion sliced
1/2 cup or so black olives
4 TBS fresh basil sliced how you like it
3 TBS sun dried tomatoes- not in oil
1/4 cup fat free italian dressing
1/2 cup reduced fat mozzarella cut in cubes

Cook pasta, drain and cool. Stir together all ingredients and sprinkle with salt and pepper to taste. Cover and refrigerate for at least 1 hour before serving. You can make this the day before a party. The more time these ingredients are together, the better!

This recipe makes 6-8 servings for just 3 Weight Watchers POINTS® each. A serving is just over 200 calories, under 3 grams fat, 2 grams protein, 39 grams carbs and 7 grams fiber. Not bad when you consider it's pasta. Enjoy!
