Skinny Gruyere Stuffed Tomatoes Print


We try to slip in at least one vegetarian meal a week. This recipe is decadent and delicious. Try our Skinny Stuffed Tomatoes. Here's what you'll need.

8 medium sized tomatoes
4 TBS chopped fresh basil
1/2 tsp dried thyme
2 cloves minced garlic
1 cup seasoned bread crumbs
1 oz shredded gruyere cheese
1/4 cup chopped scallion
1/4 tsp salt
1/2 tsp black pepper

In a medium bowl stir together all ingredients except tomatoes and cheese. Wash and rinse tomatoes then slice top off horizontally. Spoon out a small amount (1 tsp or so) of insides. Coat a cookie sheet with nonstick spray. Place tomatoes on cookie sheet. Spoon in bread crumb mixture. Sprinkle gruyere cheese on top. Cook in 400 degree oven for 10-12 minutes or until cheese is melted and tomatoes are cooked. 2 tomatoes is just under 200 calories, 4.5 grams fat, 31.4 grams carbohydrates, 4.7 grams fiber and 8.8 grams protein and 4 POINTS. Enjoy!
