Applewood Smoked Chicken Print


We love going to an authentic barbecue shack and having smoked chicken. It's delicious in salads, sandwiches or alongside a veggie for dinner. Skinny Scoopers' Chris likes smoked chicken so much she bought her hubby a Bradley smoker for Father's Day a few years back. Here's her recipe for yummy smoked chicken.

One whole chicken (3-5) pounds
1 lemon sliced into wedges
1 sliced onion
1 sliced apple
2 cloves chopped garlic
1 tsp salt
1 tsp pepper
1/2 tsp thyme
1/2 tsp oregano
1/2 tsp cayenne pepper
2 TBS brown sugar

Clean chicken and stuff with onion and apple. Squeeze lemons on chicken then stuff rinds in cavity. Tie legs together with trussing string to keep moisture in. Stir together all spices and rub over chicken. Smoke in commercial smoker at about 200-240 degrees for about three hours. We monitor ours with a meat thermometer in the meatiest part of the breast. Remove the chicken from smoker when it reaches 160 degrees and let rest at least 10 minutes before serving. A four ounce serving without the skin is just 120 calories and has only 1 gram of fat. Just TWO tasty POINTS®!

Now, let's talk leftovers. This is the true upside to smoking. Chris makes up to four whole chickens on a Saturday afternoon then uses the shredded meat all week in recipes. That distinct smoky flavor is delicious in veggie soup, low-fat chicken enchiladas, and makes a TO DIE FOR chicken salad with grapes!
