Spinach Salad with Toasted Pecans and Cranberries Print


We love spinach salad any time of year. This is the perfect recipe to get your daily serving of greens and some tasty crunch. Try our Skinny Spinach Salad. Here's what you'll need:

8 cups washed baby spinach
2 TBS dried cranberries
2 TBS toasted pecans
2 TBS crumbled gorgonzola

2 TBS olive oil
3 TBS rice wine vinegar
1 TBS sugar-free apricot preserves
1 TBS orange juice

Whisk together dressing ingredients then toss with spinach salad mixture. Reserve half of your cranberries, pecans and gorgonzola. Divide spinach mixture on 2 plates and top with cranberries, pecans and gorgonzola. This salad crunches to 250 calories per serving and 6 Weight Watchers POINTS®. It has over 6 grams protein, 21 grams fat and 7.5 grams carbs. Enjoy!
